Let me tell you exactly where I think pineapple should exist on a pizza menu, and that’s on a dessert pizza. Specifically, this Caribbean-inspired pineapple pizza! It’s always exciting to have a few dessert pizza recipes up your sleeve, especially when you want to surprise your guests with something sweet and unconventional.
The real star is the pineapple. Domino's did a study in 2018 and found that 2.2 million Australians wanted more pineapple on their pizza, with only 185,000 requesting it to be removed. Contrary to popular belief, pineapple is actually one of the most desired pizza toppings in Australia. With numbers like those, maybe they’re doing pineapple on pizza right!
Interestingly, the origins of Hawaiian pizza aren’t rooted in the tropics at all. This pineapple pizza was invented in Canada by a Greek immigrant in the 1960s and quickly spread across the U.S. Despite its name, this popular combination of pineapple, cheese, and tomato sauce has nothing to do with Hawaii. All that being said, if pineapple pizza doesn't do it for you, then this dessert twist on pineapple pizza might just change your mind.
Glazed in rum and caramelized to perfection in a hot cast iron pan, pineapple develops a nutty, honey-like flavour that elevates the entire pizza to a whole new level. To add even more flavour, top it with coconut shavings that char lightly in the oven and a touch of lime zest for a burst of freshness.
Pineapple Pizza Ingredients
- ½ fresh pineapple sliced
- 2oz / 60ml rum
- 3 Tbsp coconut cream
- 1 lime zested
- Handful of coconut shavings
- 2 ginger nut biscuits or other biscuits if not available
Pineapple Pizza Directions
Step 1
Preheat a cast iron pan over low heat in the Revolve Pizza Oven.
Step 2
Place the sliced pineapple into the hot Revolve cast iron pan and into the oven. Let cook for a few minutes, and turn the pineapple slices over and cook for another 2 minutes.
Step 3
Stretch your dough and cook it without any toppings for 60 seconds
(Tip! You can use a plate to weigh the center of the pizza down when cooking so it won't rise when cooking.
Step 4
Once cooked, pour the coconut cream on the pizza base.
Step 5
Place the glazed pineapple slices on the pizza.
Step 6
Zest the lime on the pizza and spread coconut shavings on the pizza.
Step 7
Bake the pizza at 450 degrees for another 10 seconds.
Step 8
Crumble the gingernut cookies over the cooked pineapple pizza, and done!
