Let's talk about white pizza or pizza bianca as it is referred to in Italian. It is always nice to have a few white pizza recipes in your repertoire to give variety to a pizza party. You have a few options for how to make your white base. Firstly, if you want a decadent, rich base, you can use a thick cream like pasta cream or whipping cream and combine this with mozzarella like I have done in this mortadella pizza recipe.
Or if you are planning on having a large number of different pizzas you might want a lighter version in which case you can just use mozzarella and a drizzle of olive oil to get a nice, cheesy base
This mortadella-pistachio-ricotta-lemon pizza is a combination that surprises people but quickly becomes a favourite every time I make this pizza for my guests. Lemon zest is one of the most unappreciated pizza toppings and it pairs so nicely with the creamy base and the rich mozzarella.
One tip when making mortadella pizza is to keep the mortadella in the fridge until you are ready to add the mortadella on top of the pizza as keeping it out of the fridge during a pizza session may make it change color.
Mortadella Pizza Ingredients
- 3.5oz / 100g Fior Di Latte Mozzarella
- 2 Tbsp / 30ml Whipping Cream (optional)
- 6 Slices of Mortadella
- 2.5oz / 70g Crushed Pistachio
- 2 Tbsp / 30g Ricotta
- 1/2 Lemon Zest
- 1/4 Lemon Juice
Mortadella Pizza Directions
Step 1
Spread the whipped cream on the pizza dough
Step 2
Sprinkle parmesan and mozzarella over the cream
Step 3
Zest your lemon and sprinkle the zest on the pizza
Step 4
Bake the pizza at 450°C for 70 seconds in the Revolve Pizza Oven
Step 5
De-shell your pistachios and crush them while the pizza is cooking
Step 6
Take the pizza out and add the mortadella on the pizza
Step 7
Add spoonfuls of ricotta cheese on the mortadella
Step 8
Squeeze a bit of lemon juice over the pizza
Step 9
Create a pistachio crumb on the outside of the pizza by spreading olive oil on the crust of the pizza and sprinkling the pistachio on top

You could try experimenting with different base options. A luxurious choice could be to make the base with a cream of pistachio for added flavour for your mortadella pizza.
