Looking for something simple with rich flavours and warm qualities?
Well Sopa de Ajo might be perfect for you!
Sopa de Ajo, or Spanish Garlic Soup, is a humble yet flavorful soup that has its roots in Castilla y León of Spain, traditionally prepared by shepherds and farmers who needed a warm, satisfying meal made from simple, everyday ingredients. At its core, Sopa de Ajo combines garlic, stale bread, olive oil, and smoky paprika, creating a robust and aromatic soup that’s both hearty and nourishing. The addition of poached or beaten eggs enhances the texture, while the smoky notes of paprika lend a distinctive flavour that elevates the Sopa de Ajo beyond its basic ingredients.
Often enjoyed during cold weather, Sopa de Ajo holds a special place during religious observances like Holy Week, when its simple, meatless nature makes it a fitting choice for the season. Traditionally served in rustic bowls or earthenware dishes, it's a comforting reminder of Spain’s rich culinary heritage and the ingenuity of transforming basic pantry staples into something deeply satisfying. Whether served as a starter or a main, Sopa de Ajo is a soul-warming soup that embodies the heart of Spanish home cooking, perfect for anyone seeking an authentic taste of Spain’s past and present.
Using the Revolve Pizza Oven allows for high, consistent heat to perfectly toast the bread, enhancing its texture and helping it absorb the rich garlic and paprika-infused broth.
